Remember … Be The Organic U – Feed Your Soul
3 cups almond flour
1 heaping tsp baking soda
1/2 tsp baking powder
1/2 tsp sea salt
4 large eggs
2 large very ripe bananas
1/2 cup coconut sugar
4 Tbs melted coconut oil or butter
1 Tbs pure vanilla extract
1/2 cup chopped nuts (optional)
1 tsp cinnamon (optional)
Pre-heat the oven to 350 F
Grease a 1 1/2 quart loaf pan
Whisk together the almond flour, baking soda, baking powder, and salt in a large bowl and set aside.
In the bowl of a stand mixer, mix the eggs, bananas, sugar, oil, and vanilla on medium speed until well blended.
Mix in the almond flour mixture in 3 batches on low speed, mixing well after each batch.
Stir in the cinnamon and chopped nuts.
Pour the batter into the loaf pan and bake for 45 – 50 minutes or until a knife or cake tester inserted in the middle comes out clean.
Cool in the pan on a wire rack for 10 minutes before turning it out of the pan. Allow to continue to cool completely before slicing.
