1 1/2 lb diced tomatoes (I used yellow heirloom so the jam is yellow, not red)
1/2 of a jalapeno, seeded and minced
1/4 cup diced onion
3 tbs honey
1 tbs apple cider vinegar
1/4 tsp ground black pepper
1/4 tsp mustard powder
1/4 tsp onion powder
1/4 tsp allspice
1/4 tsp ground cumin
1/4 tsp cayenne pepper
pinch red pepper flakes
Combine all ingredients in a medium sauce pan
Bring to a boil over medium heat, stir often
Then reduce the heat and simmer for 1 hour
Taste and adjust the seasonings to your liking
