Apple Pie Bread
2 cups almond flour
1 cup peeled, cored, finely chopped baking apples
1/3 cup coconut milk
1/2 cup chopped nuts (save 1 tbs for the topping)
6 tbs honey
4 tbs melted coconut oil
1 tbs coconut flour
1 tsp cinnamon
1 tsp baking soda
1 tsp apple cider vinegar
1/2 tsp vanilla
1/4 tsp sea salt
2 eggs
Crumb Topping
2 tbs almond flour
1 tbs chopped nuts
1 1/4 tsp melted coconut oil
1/8 tsp cinnamon
Caramel Sauce
1/4 cup sugar
1/2 cup coconut milk
2 tbs water
1 tsp vanilla extract
pinch of sea salt
Preheat the oven to 350
Grease a loaf pan with oil and line it with parchment paper to make it easy to remove after baking.
Mix together the dry ingredients (almond and coconut flours, cinnamon, baking soda and salt).
In a separate bowl, whisk the wet ingredients (milk, oil, honey, eggs, vinegar and vanilla).
Pour the wet ingredient mix into the dry ingredient mix. Stir just until combined. Don’t over mix.
Gently fold in the apples and nuts.
Pour into the prepared loaf pan.
Mix the topping ingredients and sprinkle on top of the batter in the loaf pan.
Bake 30 minutes then cover with foil (to prevent burning the topping) and continue to bake for another 20 minutes, until a cake tester comes out clean.
Cool in the pan on a cooling rack before removing when still warm.
To make the sauce (you can do this while the bread bakes):
Bring the water and sugar to a boil stirring constantly.
Add the milk, vanilla and salt. Cook for 10 minutes on medium heat, stir constantly so the sugar doesn’t burn. It will thicken and turn dark. Set aside.
While the bread is still warm drizzle the caramel sauce on top.
