I make my bread because I can’t eat wheat. It’s not a gluten thing. I don’t eat any grains.
In order to have bread products like crackers, I use almond flour. 

And I used to have to make everything from scratch because there didn’t use to be products in the grocery stores that you could go get. ?
Now there are a couple of brands that make items out of almond flour, so that’s pretty cool.
I made muffins with Simple Mills Artisan Bread Mix, which I use as my bread.
To give you an idea, I use a muffin topper pan. That way, they don’t come out to be very thick. They’re thick enough I can cut them in half and use them for a sandwich. They’re the size of slider.
I use them if I want a biscuit with breakfast. 

I use them for a burger bun. 

Even if as a piece of toast (they don’t fall apart in the toaster)
Almond flour is a really good alternative if you’re trying to stay away from gluten or from grains, which would include rice. A lot of gluten recipes are actually rice substitute. 

I thought I would share it with you because it is probably the best bread substitute I’ve come across so far. A lot of the Paleo breads don’t have the right consistency or don’t taste right (meaning as I remember it) since I haven’t always eaten this way.
I found almond is the best substitute if you want something to taste like bread, taste like cake … taste the way you remember it tasting before cutting out the grains.
