1/2 c palm shortening or butter (vegan butter works too)
8 oz unsweetened chocolate, chopped
1 c honey
1 tsp vanilla extract
3/4 c coconut sugar
1/2 c almond flour
1 tbs coconut flour
1 tbs arrowroot powder
1/4 tsp sea salt
1/4 tsp baking soda
4 eggs
Preheat oven to 350
Lightly grease an 8×11 baking dish
Using a double boiler, melt the palm shortening (or butter) and the chocolate together, stirring constantly. Stir in the honey and vanilla, then remove from the heat to cool.
In a food processor, grind the coconut sugar, almond flour, coconut flour, arrowroot powder, salt and baking soda just until evenly mixed.
Add the chocolate mixture and blend until smooth. Add 1 egg at a time and blend for 15 seconds between each egg.
Pour the batter into the pan and bake for 35 – 40 minutes until a toothpick comes out clean in the center of the pan.
Allow to cool for 30 minutes before removing from the pan.
