4 large eggs at room temperature
1/2 c unsweetened almond milk
3 tbs almond flour
2 tbs coconut flour
1/2 tsp sea salt
vegan butter to grease the tins
Preheat oven to 450 degrees
In a bowl, beat the eggs and almond milk, then add the flours and salt. Mix until completely combined.
In a 6-cup muffin or popover tin place a small amount of the vegan butter in each cup. Place the tin in the hot oven for 5 minutes to melt the butter.
Pour 1/4 c of the batter into each of the 6 cups. Bake for 15 minutes.
Turn the oven down to 350 degrees and bake for an additional 15 minutes.
Remove the popovers from the tin and serve warm.

I am going to try this recipe and will comment… It would be nice to give a carb count per popover. Thanks for posting, I was tired of seeing recipes with 3/4 cups almond flour and 3 eggs ……hummnnn ….. this recipe looks much more promising.
