Snickerdoodle
1/2 c coconut sugar
1/2 c butter substitute
2 c almond flour
1.5 tsp cinnamon
1/2 tsp sea salt
1/4 tsp nutmeg
3 large fresh eggs
1 tsp vanilla extract
To turn Snickerdoodle into Gingerbread add:
1.5 tsp cinnamon (additional to the above amount)
1 tbs cocoa powder
1 tbs ground ginger
Topping
2 tsp coconut sugar
1 tsp cinnamon
Preheat the oven to 330 degrees and grease an 8×8 baking pan
Combine butter, eggs, sugar, and vanilla using an electric mixer.
Add dry ingredients in batches, mixing to combine in between.
Spread evenly in the baking pan
Bake for 20-25 minutes or until cooked all the way through
Mix the topping ingredients and sprinkle on the warm cake when it comes out of the oven
