4 large zucchini
8 tbs oil
sea salt
Preheat oven to 225 degrees
Line 2 large baking sheets with parchment paper
Slice zucchini on a mandoline (to keep all slices the same thickness) for a similar thickness to making potato chips
Place the slices on paper towels in a single layer, place another set of paper towels on top and press down to extract as much natural water as possible
Place the zucchini slices on the prepared baking sheet in a single layer as close together as possible
Pour the oil into a small bowl and use a pastry brush to brush the slices
Then sprinkle with sea salt (optional) but use very little!! The slices will shrink as they bake and but the salt doesn’t. You can always add more as they’re cooling.
Bake for 2 hours or until they start to brown and are crispy
Cool before removing from the baking sheet and before serving
