The new rice that’s in town. ?
For those of you that don’t eat grains? there are a couple of rice options that you can use at home.

One of them is called Miracle Rice.
It is made from the Japanese yam called konjac.
It acts like rice.
It’s in a saltwater solution that you have to drain out.
You can even fry it.

Another option for a rice substitute is cauliflower.
You can either buy it already riced,
Just meaning that it’s been chopped small enough, like the size of a grain of rice.
Or
You can do it yourself with a food processor.
But if you do it yourself, just use the pulse setting to manually control it
Otherwise, you could actually turn it into more like cauliflower mashed potatoes, if you get it too smooth.
You don’t want it super smooth.
You just want it chopped into rice- sized pieces.
Both ways…bought already chopped, or manually chopped, work equally well.
And you can mix this Miracle Rice with the cauliflower rice if you want.

When we do stir-fry for Oriental food here at home, that’s what I use.
I use the cauliflower rice as the rice base underneath the stir-fry vegetables.

So there are some new rice options in town.
I suggest checking them out, and see what you think for yourself.
I personally don’t really miss the regular rice.
Between these two options, I can pretty much make any recipe work these days while sticking to my low-carb diet.
